Mini Chelsea Buns: A Bite-Sized Delight

Ingredients:


For the Dough:

  - 420g bread flour

  - 100g granulated sugar

  - 7g active dry yeast (one packet)

  - 1 tsp salt

  - 160ml milk

  - 85g butter, melted

  - 2 large eggs, beaten


For the Filling:

  - 60g chopped dried apricots

  - 120g raisins

  - 45g dried currants

  - 110g packed brown sugar

  - 1 ½ tsp ground cinnamon


For the Glaze:

  - Honey, for brushing


Method:


1. Prepare the Dough:

   - Sift flour, sugar, yeast, and salt into a large bowl.

   - Warm milk and butter over low heat until lukewarm.

   - Mix in the beaten eggs.

   - Combine with the dry ingredients to form a soft dough.

   - Knead until smooth and shiny, about 10 minutes by hand or 5 minutes with a machine.

   - Let the dough rise in a warm place until doubled in size, about 1 hour.


2. Make the Filling:

   - Combine apricots, raisins, currants, brown sugar, and cinnamon in a bowl.


3. Shape the Buns:

   - Divide the risen dough into four equal parts.

   - Roll each part into a rectangle, about 5x8 inches.

   - Brush with melted butter and sprinkle with the filling.

   - Roll up the dough tightly from the long end and cut into four equal pieces.

   - Place the pieces in a greased 8x8 inch pan.


4. Final Rise:

   - Cover the pan with plastic wrap and let the buns rise for 30 minutes.


5. Bake:

   - Preheat the oven to 400°F (200°C).

   - Bake the buns for 20 minutes.

   - Brush the tops with honey and bake for an additional 5 minutes until golden brown.


6. Cool and Serve:

   - Let the buns cool in the pan for 10 minutes.

   - Transfer to a wire rack to cool completely.

   - Tear apart and enjoy your homemade mini Chelsea buns!
